THE POWER COOKIE*Makes about 20 cookies*
YOU WILL NEED:1 1/4 cups all-purpose flour1 1/2 cups rolled oats1/4 tsp salt1/2 tsp baking powder1/2 tsp baking soda1 tsp vanilla extract1 large egg1 medium banana, mashed1 stick (4oz) unsalted butter, softened1/2 cup packed light brown sugar1/4 cup granulated sugar1/4 cup dried cranberries1/4 cup golden raisins1/2 cup chopped walnuts1/4 cup semi-sweet chocolate chips
DIRECTIONS:
1. First, combine your dry ingredients (flour, salt, baking soda, baking powder) in your electric mixer bowl. Next, in a small bowl, whisk together softened butter, both sugars, egg, mashed banana and vanilla extract until you get a smooth mixture.
2. Add this to the dry ingredients, then add the oats and mix until the oats are all incorporated. Add the dried cranberries, raisins, walnuts and chocolate chips, then wrap your cookie dough in plastic wrap and refrigerate for 30 minutes. (This is a very soft dough so it really needs to be refrigerated!)
3. Preheat your oven to 350 deg F and line your baking sheets with parchment paper. Drop spoonfulls of cookie dough on your baking sheets, leaving about 2 inches between the cookies. Bake for 10 - 12 minutes, or until the edges begin to brown. Let cool for 10 minutes before eating.
